Champagnes

There is only one place in the world where Champagne is made, in the Northern French wine region of Champagne, 150 km north-east of Paris. Champagne is suitable for any occasion; as an aperitif, savoured with a meal, to toast special occasions, socialising or to round off an evening.

The quality factors making Champagne distinct from other sparkling wines are the northern location, particularly traditional techniques for making, and the chalky soil. Three grapes are permitted for use in Champagnes; Pinot Noir, Pinot Meunier and Chardonnay. Using these grapes, a complex mixing process is performed using traditional ways of preparation to produce the world’s most esteemed sparkling wine, champagne.

Sparkling wines

Sparkling wine is a stylish aperitif and is great for washing down a number of dishes. Especially fish and shellfish dishes, caviars and eastern flavoured dishes are perfect with sparkling wine. Sparkling wine is also excellent after a meal.

FRESHLY ACIDIC AND FRUITY WHITE WINES

These wines are fresh and lively white wines, best savored fresh and well chilled. Few of these wines have seen oak barrels. Enjoy as an aperitif, with a starter or to accompany lightly prepared aromatic fish dishes.

RICH WHITE WINES WITH OR WITHOUT A HINT OF OAK

These wines have matured in oak barrels and the oak aroma is well presented in its bouquet, sometimes roasted and smoky, sometimes nutty with vanilla – depending on the oak. The flavour is bountiful and full-bodied. These wines are best suited with strong flavoured fish or shellfish dishes. White meat dishes also go well with these wines.

Rosé wine

Rosé is produced the same way as white wine, but using red grapes, and contact with grape skin is very brief. Rosé is superb with salads, vegetable dishes and a variety of fish dishes. Some of the bravest can try it with a pepper steak, as rosé retains excess pepper and harmonises the entirety. Also an excellent aperitif when chilled well.

Red wines

GENTLE, FRESH AND FRUITY RED WINES

These red wines are fresh, approachable, without drying tannin or very gently tannin. Despite its boyancy, the wines are suited for a variety of meals. Best savoured with cooked meat dishes such as reindeer sauté. Birds and white meat work perfectly with this wine. Served slightly chilled, these wines are also ideal for fish dishes.

MEDIUM-BODIED RED WINES

Sweet wines

These wines are mild and sweet, especially ideal for emphasising dessert flavours. The sweetness of the wine is achieved by three main natural processes: by drying the grapes, picking the grapes while frosty or with noble rot. The wines are also perfect in place of dessert.
