Lapland Hotels brings its high-quality food philosophy to the renovated Hotel Haikko Manor & Spa

Hotel Haikko Manor & Spa's diverse range of restaurants has been renewed during the past spring. As part of the renovation, Lapland Hotels has incorporated its high-quality food philosophy into Haikko's offering. The renewed manor breakfast and restaurant concepts pay tribute to the manor’s rich history as well as local ingredients and food producers. The renewed breakfast and menu of the manor restaurant will be available from June.

Hotel Haikko Manor & Spa became part of the Lapland Hotels chain in November 2023. The food products of Haikko have been renewed during the spring, respecting the manor's unique environment and traditions. Haikko’s accommodation, meeting and restaurant services are exceptionally diverse. This summer, customers can enjoy Haikko’s upgraded food products and high level of service.

"Stories are important to Lapland Hotels. A strong narrative background was also found at Haikko: The manor is based on a long history, family ownership and a desire to create something unique that combines an interesting story with a fantastic atmosphere. During the spring, we went out to renovate Haikko to strengthen its best features and bring out Haikko’s unique manor heritage even better. We believe that the renewal of Haikko will bring something unique to our customers and complement our diverse hotel portfolio," says Leena Turunen, Area General Manager at Lapland Hotels.

Silverware and old classics are back

During the spring, Haikko has redesigned the manor breakfast, restaurant menus and spa-café menu. The food products have been renewed with respect for history, and the manor's long traditions have been restored to their old glory. The manor's improved breakfast and dinner menus feature old classics as well as local ingredients. The table settings radiate the atmosphere of an old manor, and the old table silverware has been brought back.

"From the very beginning, it was clear that Haikko’s strong history and traditions would be respected. We started to think about what would fit in with the manor environment and elevated old classics as the stars of Haikko using modern cooking techniques. This meant that we had to leave our comfort zone and not bring northern ingredients into Haikko," explains Head Chef Tero Mäntykangas.

"I received four folders with old recipes from the manor. The new food concept is based on what has been enjoyed at the manor over the past decades. The food in Haikko is highly local – including fresh fish, shellfish and game. The ample table setting of the renovated manor breakfast includes sandwich cake, deer pâté and crab cake. The manor restaurant offers the Haikko menu and the á la carte menu, which includes Wellington, zander, luxurious caviar and lobster," says Mäntykangas.
Haikko and Lapland Hotels also have a high level of service in common.

"Some of our staff have worked at Haikko for as many as 30 years. It’s been great to see that our staff are excited about how to bring back some of the old to the renewed Haikko, with a modern twist. Service has always been strong at Haikko, and now as part of the Lapland Hotels chain, we continue this tradition. Our goal is to provide our guests with a high level of service and to delight them by being authentic and welcoming," says Hotel Manager Marja-Liisa Karhu.
