Michelin award-winning VÅR and Dabbal Kitchen & Bar to host a unique dinner in Tampere in April

Lapland Hotels’ joint dinner events with the top names in the Finnish restaurant industry continue as Dabbal Kitchen & Bar and the Porvoo-based restaurant VÅR are preparing to host a joint dinner in Tampere on Saturday, 6 April 2024. The dinner will combine Dabbal’s pure northern ingredients with Michelin-awarded restaurant VÅR’s food philosophy. The dinner is planned and executed together with VÅR’s chef and restaurateur Niko Lehto.

A joint dinner event of two top restaurants in Dabbal offers customers a unique world of flavours centred around the Arctic Ocean and the fells. The ingredients of the six-course surprise menu represent the finest food in the North, including cod and willow grouse.

“VÅR is a prestigious and award-winning restaurant. Niko’s mindset and style of cooking are well aligned with our northern food philosophy. In addition to Scandinavian flavours, we also share the love for Finnish ingredients and, for example, the goal of minimising meat loss,” says Tero Mäntykangas, Head Chef at Lapland Hotels.

In addition to a Michelin Star, restaurant VÅR, which relies on local ingredients, has also been awarded a Michelin Green Star as a sign of the restaurant’s sustainable values.

“Restaurants in Porvoo have always had a great team spirit. Now that Lapland Hotels also has a location in Porvoo with the acquisition of Haikko Manor, I’m excited to get to work with them. Visiting Tampere will be very interesting for me, as the Arctic Ocean theme allows me to use ingredients that I rarely get to cook with. You can’t experience a similar menu at VÅR, which makes the dinner unique,” says Niko Lehto.

Working together promotes development

Lapland Hotels has organised joint dinners with top Finnish restaurants and chefs in their city hotels for many years. The first dinner event was held in restaurant Sky Kitchen & View in Rovaniemi in the early 2000s. Over the years, almost every well-known Finnish chef has visited Lapland Hotels’ restaurants.

“Our customers look forward to these visits, which we organise a few times a year. When the concept was originally developed, we saw it as an opportunity to not only offer unforgettable culinary experiences but also to learn from each other. Visiting chefs have gotten a chance to familiarise themselves with the rare, slightly mystical ingredients of the North,” Mäntykangas says.

“Our own chefs and cooks have learned and grown tremendously through these collaborations. Continuous development and the strengthening of everyone’s personal skills are essential parts of our food philosophy and the operations of the entire Lapland Hotels & Safaris tourism company. The concept will be expanded in the future so that our young professionals will also get to visit other restaurants,” Mäntykangas explains.
