Lapland Hotels brings rare delicacies from the Arctic Ocean to cities again

Press release | Mon Oct 17 09:22:00 2022

The flavours and atmosphere of the Arctic Ocean will be available at breakfast, dinner, on the surprise menu and meeting catering at Lapland Hotels’ select urban hotels from 19 October to 5 November 2022. Head Chef Tero Mäntykangas says that the recipes of the immensely popular Arctic Ocean weeks have been further refined and the offering slightly modified from last year. Fish and shellfish will again play the leading role, but there will also be more reindeer on offer.

The Arctic Ocean theme weeks will take place at the Kultá restaurant of Lapland Hotels Bulevardi in Helsinki, Dabbal in Tampere, Gallá in Kuopio and Oula in Oulu. Ingredients from the Arctic Ocean region are particularly delicate and fine – their handling and preparation requires expertise that can be found in the restaurants of Lapland Hotels’ urban hotels.

“For us in Lapland, the Arctic Ocean’s treats are the most typical local food. We’re lucky to have the opportunity to cook with such diverse and pure ingredients and also bring a taste of them to cities. Culinary enthusiasts will now have a chance to enjoy rare delicacies such as fresh scallops and anglerfish that aren’t often available in southern Finland,” says Mäntykangas.

Surprise menus vary by restaurant

This year’s specialty is the Arctic Ocean platter that contains, for example, king crab, scallop, oysters and mussels. The dish is great for sharing between two. In addition, each restaurant will plan its own surprise menu featuring selected ingredients from the Arctic Ocean.

“I want to put the top talents in our kitchens in the spotlight and give them free rein in planning the menu. With ingredients as fine as these, one’s imagination is the only limit. The theme weeks also allow customers to sample rarely served culinary experiences, such as cod tongue or cheek.”

“Now we’ve also included more reindeer. Similar to last year, customers are in for hearty dishes that are meant to be shared. The Arctic Ocean’s salty ingredients complement exquisitely the sweet flavours of Lapland. Themes such as this that combine northern culinary cultures are a perfect fit for Lapland Hotels’ food philosophy,” says Mäntykangas.

The urban hotels participating in the theme weeks will also offer the delicacies of the Arctic Ocean at dinner and breakfast included in Staycation packages from 19 October to 5 November 2022.
