Samppanjat Champagnes
Samppanjaa valmistetaan vain ja ainoastaan yhdellä alueella maailmassa, Ranskan pohjoisimmalla viinialueella, Champagnessa, 150 km Pariisista koilliseen.
Samppanjan laatutekijät, jotka erottavat sen muista kuohuviineistä, ovat alueen pohjoinen sijainti, erityinen traditionaalinen valmistustapa sekä kalkkikivinen maaperä. There is only one place in the world where Champagne is made, in the Northern French wine region of Champagne, 150 km north-east of Paris.
The quality factors making Champagne distinct from other sparkling wines are the northern location, particularly traditional techniques for making, and the chalky soil. Beneath the thin cover of soil is a chalk layer with thicknesses from dozens of metres to even 300 metres in some places. These layers were formed by the calcium of shellfish and plankton-type single-cell organisms, which over the millennia has formed a thick layer. This chalky ground is very permeable to water, evens temperatures and ensures a high acidity for the grapes, which is vital in the preparation of Champagne.
Three grapes are permitted for use in Champagnes; Pinot Noir, Pinot Meunier and Chardonnay. Using these three, or Chardonnay or Pinot Noir alone, a complex mixing process is performed using traditional ways of preparation to produce the world's most esteemed sparkling wine. The method used for producing Champagne, methode champenoise, is a special process. The second fermentation, which produces the millions of little bubbles in the wine, occurs in the same bottle in which the wine is sold.
A quality Champagne with its freshness and sophistication is a combination of bounty, strength and breed that is almost impossible for any other sparkling wine to surpass. Kuohuviinit Sparkling wines
Kuohuviini on tyylikäs aperitiivi ja se sopii myös monille ruokalajeille kyytipojaksi. Erityisesti kala- ja äyriäisalkuruoat, mädit sekä itämaiseen tapaan maustetut ruokalajit ovat omiaan kuohuvien viinien parina. Aterian päätteeksi kupliva viini sopii myös erinomaisesti.
Champagnen maaperä ja ilmasto takaavat uniikin perustan samppanjalle, jota muut kuohuviinit eivät voi saada. Sparkling wine is a stylish aperitif, and is great for washing down a number of dishes. Especially fish and shellfish dishes, caviars and eastern flavoured dishes are perfect with sparkling wine. Sparkling wine is also excellent after a meal.
The soil and climate of the Champagne region provides a unique foundation for Champagne that other sparkling wines cannot achieve. The region is, however, rather restricted, as is the number of bottles produced, so some of the Champagne Houses themselves have expanded to other regions of the world. The method of producing Champagne has been copied in many of the world's wine regions, and the traditional in-bottle fermentation process gives the sparkling wine fine bubbles and a full-bodied aroma. Sparkling wine may also be produced using other methods, for instance, using a tank fermentation process. In this process, the second alcoholic fermentation process occurs in an isolated pressure tank instead of in the bottle or using a transfer method where second alcoholic fermentation does takes place in the bottle, but slightly simplified and the bottles are not shaken to remove sediment.

Cava is prepared using the same in-bottle second fermentation as Champagne. Codorníu is Spain's oldest Cava producer, that has produced wines since the mid-sixteenth century by the same family. The Clasíco name comes from the blending ratio of grapes, which Codorníu Cava's developer, Josep Raventós, already used back in 1872. The sparkling wine is fresh and fruity with a bouquet of apple and toast, a dry aftertaste.

Crémant is French sparkling wine prepared in the traditional Champagne way, where the second alcoholic fermentation takes place in the bottle put on the shelves for sale. The word Crémant means a creamy character found in many Crémant sparkling wines. France has seven Crémant regions, of which Alsace was awarded the AC Crémant-classification in 1976. The grapes are picked by hand in the Rouffach region. The wine is dry, freshly balanced, strong, long-lasting bubbles, bouquet of apple, vanilla and cinnamon.

Bodega Norton is today owned by the Swarovski Crystal family, and a lot of investment has been made into developing the vineyard. The vineyards are located in the Luyan de Cuyo wine region high in the Andes, and the cool climate gives the wine a refreshing acidity. The wine is dry and refreshingly fruity. Excellent as an aperitif, with a range of starters and salads, perfect for fish dishes, and Sauvignon Blanc is a classic accompaniment to goat cheese.

This house run by Ernst Loosen has 12 hectares of vineyards located on the finest slopes of Mosel. One of the cornerstones of quality may be regarded as the first-class vineyard with old, ungrafted vines averaging an age of 60 years, which produce small amounts of intensively aromatic grapes. The wine contains only 45g/l of residual sugar, so the wine is fairly sweet, but good acidity and low alcohol content make the wine well balanced and fresh.

Gobelsburg castle is first mentioned in historybooks 1074. The castle has been owned by Zwettl brotherhood of monks since 1740. At 1996 brotherhood rented out its vineyards, some of them Austria´s finest, and the castle to Willi Bründlmayer and Michael Moosbrugger. Wines of Schloss Gobelsburg are strongly characterized by their habitats. Organic cultivation, annual production being 200,000 btls.

The Rieflé family has a long tradition in producing wine in the Rein Valley. One of their ancestors, Joseph Rieflé, was particularly enthusiastic at selling wines and expanding business at his old, seventeenth century estate.
Today, Joseph's grandson, Jean-Claude, carries on the family's traditions and produces classic and very high standard wines. Most Alsace wines are produced from a single type of grape. Seven different types of grape are cultivated in the region, Riesling is often thought as one of the finest of these.

Vineyard's founder and "Lifelong President" Randall Grahm was born in Los Angeles in 1953. He is the rock star of the world of wine, whose trademarks include twisted humour, crazy stunts, rare grapes and the broad-minded combination of these. He discovered wine in the 1970s when working at a wine store in Beverly Hills. Once he had developed a taste for good wine, he became so enthused with the wine industry that he studied for a Winemaker's Degree and with the help of his family, purchased a vineyard in Santa Cruz. This wine is produced by blending Riesling from the State of Washington with German Riesling to result in a fresh white wine suitable for a variety of uses. The Bonny Doon style is unique with labels being visually playful and comic-like.

André Ostertag, winemaker and poet, produces some of France's most interesting wines at the vineyard founded by his father in 1966 in the Epfig village of Alsace. The Ostertag vineyard has stringently adhered to biodynamic principles since 1998. Wines are allowed to ferment with natural yeast, and they are often unfiltered. Diverging from more traditional wine production of the Alsace region, Ostertag uses small oak barrels in Burgundy style. Indeed, this Pinot Blanc wine has matured in small oak barrels, which provides the wine with an extra dimension in addition to its fruitiness. André Ostertag's partner, Christine Colin, works as an artist who often uses the vines in her work. Christine's artwork also decorates the labels of Ostertag wines.

The grapes used in this wine originate from the old Podere Massoni vineyard vines. Harvest takes place as late as mid-October. A fine wine for fish and shellfish dishes. Also a great wine on its own without a meal.

Grapes are late-harvested from a single 6 ha vineyard « La Rocca ». The vineyard facing south is located just behind a medieval castle, which dominates Soave landscape. Until beginning of 20th century Soave was known as Petit Chablis due to its fresh minerality in soil ! The wine is fermented and matured in small 500 l oak barrels. Limited edition, beautiful bottles are hand-painted.

Rosé is produced the same way as white wine, but using red grapes, and contact with grape skin is very brief. Rosé is superb with salads, vegetable dishes, eastern meals, and a variety of fish dishes. Some of the bravest can even try it with a pepper steak, as rosé retains excess pepper and harmonises the entirety. Also an excellent aperitif when chilled well.

Viinissä on melko täyteläinen maku, aromeissa tuntuu mehevää kirsikkaisuutta ja boysenmarjaa, tanniinit ovat pehmeän herkulliset ja tuntuva hapokkuus tasapainottaa paksua makua. Parhaimmillaan viini on häränfileen ja karitsan kyytipoikana. Myös yrttiset riistaruoat sopivat hienosti.
From the Lunlunt Vineyard situated at a height of 850 metres, coming from the Luyan de Cuyo wine region, this Norton Barrel Select Malbec is produced with handpicked grapes. The grapes are steeped in wine at the end of the process for 14 days to extract the tannin and colour. At the end of fermentation, half the wine is matured in French oak barrels for twelve months. The wines are rather full-bodied, aromas of juicy cherries and loganberries, deliciously soft tannins and noticeable acidity balances the thick flavour. The wine is best accompanied by beef fillet and lamb. Meals with herbs also work well with this wine.

These red wines are fresh, approachable, without drying tannin or very gently tannin. Despite its buoyancy, the wines are suited for a variety of meals. Domaine Ramonet is the outright legend of Burgundy. The company owns 17 hectares of vineyards. The majority of the Ramonet vineyard is located in the Chassagne-Montrachet region, but the company also has vineyards in the Puligny-Montrachet and Saint-Aubin regions. The company is run by brothers Noël and Jean-Claude Ramonet, who continue the great work of their father Pierre Ramonet. The high standard of the wines is a result of a number of factors: vine yield is kept low, vines are very old and oak is used in a considered fashion. Most important of all, however, are the vineyards the company owns in superb locations. Both red and white wines are allowed to mature in oak barrels, around a third of which are new.

Jumilla is the world's most important production area for the Monastrell grape. Wines are especially full-bodied, deep red in colour and very fruity, the cherry and plum aromas distinguish this wine from others in the region.

The vineyards are located on the sunny southern slope of Tokaj highlands. The soil is volcanic. The slopes are well fed with water due to the Tisza and Bodrog rivers that flow below. Sufficient dampness and other conditions of the area make the grapes form noble rot (Botrytis cinerea). Puttony is the name of the basket used to collect the grapes, which takes up to 20 kg of noble rot grapes. The number of puttonys on the label is how many basket-loads of noble rot grapes are used to make one barrel of wine. The more use, the sweeter and more valuable the wine is.

It has a very long lingering finish with great acidity.

The well-ripened Monastrell grapes are selected from the Bodegas Castaño vineyard, producing only a few grapes, and which are not artificially watered. The grape juice is allowed to diffuse for an extended period in cool condition, which gives it an intensively bountiful colour and smooth and sweet tannic properties characteristic of Monastrell varieties. The wine is allowed to mature in oak barrels where the wine gets its fine diversity.

Produced from carefully selected, hand picked grapes. The wine is allowed to ferment for a few days before the fermentation is interrupted by adding pure grape spirit or Aguardentea to the fermentation tank. The alcohol content of the wine rises to 20 % and the unused sugar of the grape juice remains in the wine. After this, the wine is shipped to the suburb town of Orporto on the Atlantic coast, Vila Nova de Gaia. Here the cellar master blends the batches of various vineyards.

The Saint-Emilion region is the excellent location of the Château Jean-Faure. Its western neighbours are Château La Dominique and Château Cheval Blanc, and only 500 metres to the south-west is Château Figeac. The wine is spicy, multidimensional, with aromas of plum, blackcurrant, cedar, coffee, blackberry. Medium-bodied, succulent, spicy, upright, long-lasting flavour.

The vineyards owned by the Foradori Family are located on the Rotaliano plains, known for being the only place in the world where Teroldego grapes grow. The Teroldego Rotaliano classified region covers only around 400 hectares, so the annual production of this unique wine is very small. The Foradori winery is renowned as being one of the regions most prestigious.

Casa Lapostolle has risen relatively quickly to become one of Chile's most renowned wineries. The vineyards are owned by the French Marnier-Lapostolle family. They wanted to produce first-class wines and ended up in Chile in 1994, the volcanic soils and isothermal climate of which provided excellent conditions for winemaking. He was also lucky enough to find old vineyards with vines of French origin. Casa Lapostolle wines combine Chilean nature with French skill at winemaking.

Sadonkorjuu suoritetaan käsin lokakuun lopulla. Rypäleet valikoidaan huolellisesti ja vain 15% kokonaissadosta käytetään Amaronen valmistukseen. Rypäletertut kerätään 7kg:n puulaatikoihin ja kuivatetaan hyvin ilmastoidussa tilassa noin neljän kuukauden ajan. Luonnollinen kuivattaminen rikastuttaa rypäleiden sokeripitoisuutta ja viinin alkoholipitoisuus voi kohota jopa 15 t-%. Helmikuussa kuivatut rypäleet puristetaan ja valmistetaan punaviiniksi. Viiniä kypsytetään kolme vuotta ranskalaisessa Allier-tammessa ja puoli vuotta pullossa. Elegantti uuden tyylin Amarone.
Harvesting is performed by hand at the end of October. Grapes are carefully selected, and only 15 % of the total crop is used to make Amarone. The bunches of grapes are gathered into 7 kg wooden boxes and dried in a very well ventilated space for around four months. Natural drying enriches the sugar content of the grapes, and the wine can rise to a strength of 15 t-%. In February, the dried grapes are pressed and used to make red wine. The wine is matured for three years in French Allier oak barrels and six months in the bottle. A new style, elegant Amarone.

Torresin kansainvälisesti tunnetuimman, punaisen "lippulaivan" ensimmäinen vuosikerta tuotettiin 1970. The "flagship" of the world-renowned Torres first vintage was produced in 1970. In 1979 at a Gault-Millau publication arranged "Red Wine Olympics", Mas la Plana was held in equal esteem to e.g. 1970 Château Latour and 1961 Château Haut-Brion. The style of the wine expresses its soil, old Cabernet Sauvignon vines and especially the special characteristics of the Pacs del Penedès microclimate purely and impressively.
